It's a Bean Kind of Sunday

Chickpea Curry


Ingredients
1 can chickpeas
1 C plain greek yogurt
1 T garlic powder
2 T curry paste

Directions
Combine all ingredients and allow to heat until soft. Serve on brown rice.

Thai-style Chickpeas


Ingredients
1 can chickpeas
1 can diced tomatoes
1/2 C peanut butter

Directions
Combine all ingredients and cook on low for 20 minutes. Serve on brown rice or tofu noodles.

Southwest Style Beans and Corn


Ingredients
1 can black beans
1 can corn
1 can diced tomatoes
1/2 C BBQ sauce

Directions
Combine all ingredients and cook on low for 10 minutes. Allow to cool and serve on spinach leaves.
